Source: Shodhganga: Dietetics and culinary art in ancient and medieval IndiaDravyaguṇāguṇa (द्रव्यगुणागुण) is the name of the first pariccheda of the Bhojanakutūhala, a work dealing with the topics of dietetics and culinary art, also known as Pākaśāstra or Pākakalā.—The first pariccheda titled dravyaguṇāguṇa-kathana contains the discussions on different food articles and their dietetic effects according to the prominent Ayurvedic treatises. Here in the text, there is a section named siddhānna-prakaraṇa devoted to the preparation of different varieties of food items. This pariccheda also discusses on different topics like food timings, food habits, dining vessels, procedural details of eating and post dining activities.
